Summer Detox Salad Recipe
Looking for a fresh, crisp and nourishing summer salad? Try this recipe to reset the gut and help kickstart your journey to a healthier you!
Ingredients
Serves 4

1 head broccoli, grated

1⁄2 cup extra virgin olive oil

1⁄4 cup lemon juice

3 garlic cloves, minced
-
1⁄4 cup pine nuts, toasted

6 baby cucumbers, sliced lengthways
-
6 radishes, sliced thinly
-
6 mint leaves
-
Handful rocket leaves

Greek yoghurt to serve
Method

Place the grated broccoli in a medium sized bowl and toss in the lemon juice, olive oil, minced garlic and toasted pine nuts until well combined.

Place on a plate and serve with the cucumber, radishes, mint leaves, rocket, a dollop of Greek yogurt and a drizzle more of olive oil to serve.
