Spiced Asian Turkey Salad Recipe
A light and nutritious meal, perfect for using up left over turkey! You could even swap the turkey out for chicken!
Ingredients
Serves 4

1 packet rice noodles, cooked to instructions

1 skinless turkey breast, cooked and shredded

200g snow peas blanched

Handful mint leaves, chopped

Handful coriander leaves, chopped

3 spring onions, chopped

1 red chilli, chopped

1 cup coconut milk
-
1⁄4 cup lime juice
-
1 tsp fish sauce
-
1 tsp coconut sugar
Method

Toss the cooked noodles with the shredded turkey, snow peas, mint, coriander, spring onions and red chilli in a medium sized bowl.

Whisk together the coconut milk, lime juice, fish sauce and coconut sugar in a small bowl until well combined. Add to salad and mix well to combine.
